If your dates are not already pitted, cut a vertical slice into them and remove the pits. You’ll also want to remove the stem at the end, if still attached.
Open up your dates at the slice mark that you created when you pitted them. Scoop about 1 teaspoon of butterscotch peanut butter into the date.
Place your 1/3 cup semi sweet chocolate chips in a microwave safe bowl. Here’s where you’ll want to add your half teaspoon of coconut oil to the chocolate, if using. This helps prevent the chocolate from burning in the microwave. I microwaved mine for 30 seconds, stirred it up a bit, and then microwaved for another 10 seconds. After that it was ready to go. If you need to microwave for longer, I recommend doing 10 seconds at a time and stirring in between to avoid burning the chocolate. Stop when the chocolate is just melted enough.
Using a spoon, scoop some chocolate onto the top of each date. This comes out to about two teaspoons of chocolate per date.
Lay your dates chocolate-side up on a tray covered with parchment paper. Sprinkle with sea salt to taste (don’t overdo it).
Place your tray of dates in the freezer to set for about 30-60 minutes. Once the chocolate has frozen, you can enjoy them! I store mine in the freezer and eat them frozen. They are so good!
