This buffalo chicken dip is perfect for a Super Bowl snack, or even for a Valentine’s Day date night at home. I love a spicy and cheesy treat, and buffalo chicken dip is truly a favorite when I have it at parties and other gatherings.
You can cook this delicious dip in a small casserole dish or an 8″ cast iron skillet. I tried it both ways. The skillet was my favorite – it really had a nice depth of flavor – but it was good in the casserole dish too. Feel free to use what you have! Instructions are provided for each baking method.
To serve this delicious dip, I recommend homemade tortilla chips. These can be made by deep frying slices of corn tortillas in olive oil. After having homemade chips, I rarely buy them bagged anymore. They are just so satisfying when you make them yourself! However, for these photos I used bagged chips, because we ran out of olive oil.
Besides chips, buffalo chicken dip also tastes great on plain Triscuits. In fact, that’s how I usually enjoy this dip at family holiday parties.
1. Allow cream cheese to sit at room temperature until it is soft. Shred your cheddar cheese if not pre-shredded.
2. Preheat the oven to 350 degrees.
3. Drain the can of chicken. Heat up a frying pan on medium heat. Cook chicken with dash of salt and pepper for about 5 minutes, until it browns.
4. In a large mixing bowl, add browned chicken, ½ cup hot sauce, ½ a block of cream cheese, ½ cup of ranch dressing, and most of the shredded cheese. Mix together.
5. Heat your cast iron skillet on your stovetop on medium heat until the pan reaches 200 degrees (I used a meat thermometer to measure the temperature). Drizzle about a tsp or less of olive oil. Spread evenly to coat pan.
6. Spoon mixture into your cast iron skillet. Top with the remaining shredded cheese.
7. Place in oven for 12 minutes, until cheese is thoroughly melted.

7. Place in the oven for 20-25 minutes, until cheese is thoroughly melted.
8. Turn on your broiler at 400 degrees. Broil for about 2 minutes, until the top has lightly browned. Keep a close eye on your dip during this step, as it’s easy to overcook it.
9. Remove from oven. Let cool for about five minutes. Serve with chips or crackers. Serves two.
