I love a refreshing and foamy whiskey sour, but recently I was out of whiskey and only could find a bottle of silver tequila in my stash. I took inventory of the cocktail supplies I had on hand, and from that I stumbled upon this concoction: the tequila sour.
This drink is so refreshing, and has now become part of my regular cocktails that I serve myself on the weekends. I used bottled lemon juice because that’s what I had available. However, you could use fresh squeezed for an extra special touch of flavor.
Normally, the foam on a cocktail comes from shaking some egg whites into a drink. Truthfully, using raw egg whites always freaks me out a bit. Despite reading that it’s generally safe, I prefer to use something else to add the foam to my beverage. Some research has brought me to an alternative: aquafaba.
Aquafaba is actually the liquid leftover in a can of chickpeas. I always drain and save this liquid in a mason jar in my fridge. A small amount is perfect for adding foam to cocktails! With the sour of the lemons and the sweetness of the simple syrup, you don’t taste the aquafaba at all. If fact, just a half ounce goes a long way toward adding some foam to your beverage.
