Coquito is a traditional Puerto Rican rum drink that is consumed around the holiday season. It’s a creamy and satisfying drink similar to enjoying an eggnog. In this coquito recipe, I’m going to teach you to turn this classic drink into a delicious virgin iced latte.
Coquito Recipe: My Love of Coquito
Coquito is something I had never heard of until I started dating my Hispanic husband. He introduced me, and I fell in love with the drink (and with him!). A new tradition for me is enjoying a glass of coquito while decorating my Christmas tree.
Crafting a Virgin Coquito Recipe
This year, I’m pregnant with my second child, but I don’t want to miss out on my favorite seasonal beverage. I brainstormed how I could create my own virgin beverage that’s just as special as the rum version. I love a good latte, so I decided to create this virgin coquito latte.
This drink turned out better than I ever could have imagined. The coffee flavor pairs so well with all of the creamy milks and cinnamon. I think I may have created a new tradition for myself!
Coquito Recipe: A Double Shot of Espresso
This recipe calls for a double shot (3 oz) of espresso for maximum coffee flavor. I made mine with decaf espresso since I’m trying not to overdo it with caffeine during my pregnancy. For less coffee flavor, you can use a single shot (1.5 oz).
Making a Cinnamon and Sugar Rim
I wanted to rim this drink in cinnamon, but that on its own wouldn’t have been very tasty. So, I created a cinnamon and sugar rim using organic cane sugar. I put a small amount of cinnamon and sugar in a bowl and mixed together. Then I wet the rim of my glass and carefully dipped it in the mixture, twisting to coat the rim evenly.
Coquito Recipe: Virgin Iced Coquito Latte
This delicious virgin coquito iced latte is the coquito recipe to try if you're trying to skip the alcohol.
Brew espresso using your preferred method and chill in fridge until cooled, about an hour.
Combine evaporated milk, condensed milk, cream of coconut, espresso, vanilla extract, and cinnamon in a cocktail shaker with ice. Shake vigorously.
Strain out ice and pour into glass prepared with an optional cinnamon and sugar rim. (To prepare the rim, wet the rim of the glass and dip into a mixture of cinnamon and sugar until coated).
Top with a sprinkle of cinnamon if desired. Enjoy!
